Lab Introduction
NTU Food Fingerprinting Lab is dedicated to applying scientific methods in food traceability. We employ chromatography, high-resolution mass spectrometry, texture analysis, and multivariate analysis to collect and elucidate food’s physical and chemical information and discriminate their geographic origins and production methods. Our group has successfully distinguished between aquatic and agricultural products of different geographic origins and production methods, respectively. Moreover, we uncovered the determinants that resulted in origin differences. The achievement in this lab can be used as the basis for future food origin inspection methods to protect consumer rights. They can also provide references for advancing Taiwan’s food production technology.
